muffin man

A few months ago my friend Karmen gave me this delicious recipe for pumpkin-chia seed muffins and now they are a staple in our household. I wish you could smell them over your screen because they are delicious!

Pumpkin-Chia Seed Muffins:

Dry Ingredients
*6 Tbsp chia seeds, ground (use coffee grinder)
I often will substitute the chia seeds for flax seeds
*1 c whole wheat or whole grain flour
*1/2 c white unbleached flour
*2 tsp cinnamon
*1/2 tsp nutmeg
*2 tsp baking soda
*1/2 tsp salt

Wet Ingredients
*16 oz can of pure pumpkin
Sometimes I will steam a bag of frozen pumpkin or roast a fresh pumpkin and scoop it out
*2 eggs
*1/4 c extra virgin olive oil
I will often substitute with safflower oil
*1 cup pure maple syrup (or 1/2 c of agave or both)
*1 Tbsp vanilla
1/2 c of chopped walnuts (optional)

Pre-heat oven to 350
mix dry ingredients and wet separately
folt wet into dry ingredients (fold in nuts now) and spoon into greased muffin tins.
bake for approx. 25-30 minutes
enjoy!
