Sweet!


Maple syrup is good for you!!! A new study has been published showing that maple syrup has tons of antioxidants and has antibacterial, anti-cancer and anti-diabetic properties. I always knew it had value but not this much. I'm so thrilled because we use maple syrup everyday. We pour it over pancakes and French toast, marinade with it, use it in smoothies and I bake with it all the time.

There are so many great recipes out there but I think I will start with something simple today.

Maple Vinaigrette

½ teaspoon salt
¼ teaspoon freshly ground pepper
2 tablespoons pure maple syrup
1 teaspoon Dijon mustard
2 tablespoons red wine vinegar
1/4 cup olive oil
Mix together in a jar by hand or for a creamier dressing, use a Braun hand blender.

This dressing is particularly good on tossed green salad (mesclin) with sliced strawberries and browned slivered almonds.

Yeah maple syrup!
