Comfort food

A friend of mine came over for a visit today. We had a good talk about raising boys and some of the struggles we have had with our older children. We talked and ate and talked some more and by the time the visit was over I was feeling a lot better and ready to tackle the day. That's what a good friend and banana bread can do some times.
This banana bread is so easy to make and really, really yummy. I wish I had taken a picture of the whole loaf but it went very quickly.
Here's the recipe from the cookbook How it all Vegan:

For added sweetness, add 1/2 cup of chocolate chips to this recipe

3 ripe bananas, mashed
1Tbsp lemon juice
1/2 c of oil
1/2 c of sweetener
1/4 c of chopped dates (0ptional)
1 1/2 c of flour
1/2 c of wheat germ
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda

Preheat oven to 375. In a small bowl, mash the bananas with a fork until very mushy, then add the lemon juice, oil, sweetener, and dates and stir together. In a separate large bowl, stir together the flour, wheat germ, salt bp and bs. Add the banana mixture to the flour mixture and mix together gently until "just mixed". Spoon into lightly oiled loaf pan and bake for 40-50 minutes. Test with a knifre to see if done. Makes 1 loaf.
